Honey Cakes
I found this recipe on Pinterest about 5 years ago and updated it to give it more honey flavor. It’s called Honey Cakes, but as you can see from the photo, it is really more of a delicious, sweet biscuit than a layer cake. Don’t get this confused with Russian Honey Cake (Medovik) which is a true layer cake.
I wasn’t able to find the origin of this style of Honey Cakes, but there are references to Honey Cakes in association with “The Hobbit” and also with recipes for the Summer Solstice / Litha.
I have seen some recipes add vanilla extract, but that will mask the honey flavor. In fact, the next time I make it, I will probably try to add another tablespoon of honey. I have seen some recipes that use up to 1 cup of honey.
The recipe is simple. In a large bowl, sift your all-purpose flour, baking powder and salt together. Warm the honey in the microwave for up to 20 seconds. Drizzle/Pour the honey over the flour mixture. Drop in the pieces of butter and toss so the honey and butter are covered by the flour mixture.
Next, use your fingertips to rub the honey butter with the flour until crumbly. In a separate medium size bowl, beat the eggs in with the heavy whipping cream. Add this to the flour/honey butter mixture and stir. The dough will be sticky.
Turn out onto a generously floured surface. Sprinkle the top with a little more flour. Pat into a round that is approximately 1/2 inch to ¾ inches in thickness. Use a round cookie cutter to cut into rounds. Lay your dough rounds on a parchment paper covered baking sheet. Bake for 12 to 14 minutes at 350 degrees Fahrenheit or until lightly golden and firm. Enjoy with some additional honey or jelly.

- 1 teaspoon salt
- 6 tablespoons butter (cut into small pieces)
- 5 tablespoons honey
- 2 Eggs
- 1/2 cup heavy whipping cream
Directions
- Step 1 Preheat your oven to 350 degrees.
