Braised Red Cabbage with Apples and Wine
One of the recipes I really enjoy in the fall is Braised Red Cabbage with Apple and Wine. It’s delicious and pairs well with a pork roast and sweet potatoes.
My Mother used to make this, but the wine is an add from culinary school. First you need to shred the red cabbage or you can just buy it shredded like I do. Add it to a large pot.
Next render the bacon. Remove the bacon to a plate lined with paper towels to drain, leaving the bacon fat in the pan. Sweat the onions in the bacon grease until they are translucent. Add the bacon and cooked onions to the pot.
Add the remaining ingredients. I use a Cabernet Sauvignon for the wine. Cover and braise on low until the cabbage is tender, approximately 40-50 minutes. Taste to see if you need to adjust and add any brown sugar or apple cider vinegar to get a balanced flavor.

Braised Red Cabbage with Apples and Wine
A delicious Braised Red Cabbage with Apples and Wine. Perfect for a fall day. Pairs well with a Pork Roast and Sweet Potatoes.
Ingredients
- 8 ounces red cabbage, shredded
- 3 ounces bacon, medium dice
- 8 ounces red onions, medium dice
- 6 ounces chunky applesauce
- 3 ounces red wine
- 3 ounces vegetable stock
- 3 tablespoons apple cider vinegar
- 2 teaspoons brown sugar
- NOTE: I used my Applesauce recipe. It is chunky and has the perfect blend of spices in it. https://thefinisheddish.com/2021/09/20/applesauce/ You can substitute by using 6 ounces apples, peeled, cored and diced, plus 1 cinnamon stick, ¼ teaspoon ground cloves and ¼ teaspoon ground nutmeg.

- Step 1 Shred the red cabbage or buy it already shredded. Add it to a large pot.
- Step 2 Render the bacon. Remove the bacon to a plate lined with paper towels to drain, leaving the bacon fat in the pan. Sweat the onions in the bacon grease until they are translucent
- Step 3 Add the bacon and cooked onions to the pot. Add the remaining ingredients.
- Step 4 Cover and braise on low until the cabbage is tender, approximately 40-50 minutes.
- Step 5 Taste to see if you need to adjust and add any brown sugar or apple cider vinegar to get a balanced flavor.
