Shrimp Fried Rice

This will probably be the easiest Shrimp Fried Rice recipe you will ever make.  Every time I order Chinese food, I always purchase an extra fried rice and freeze it.  That way when I am busy around the house or working, I can pull it out, add a protein (Shrimp, Chicken, Beef or Pork) and have a quick meal.  Today I had some Shrimp thawing out for another recipe, so this was a perfect protein to add.  Shrimp is quick, but if you use chicken, pork or beef, cut into a small dice so you don’t have to cook the protein so long.

For this recipe, you will need;

Raw peeled and deveined shrimp
Leftover fried rice
Low-sodium soy sauce
Sweet chili sauce (I use Mae Ploy Sweet Chili Sauce)
Green Onions, sliced (white and light green parts)

To make this recipe, cut your raw shrimp or other protein into small pieces. Set aside.

Spray a large skillet with a non-stick cooking spray. Add the shrimp and stir until they start to turn pink.

Add your leftover fried rice, low-sodium soy sauce, and sweet chili sauce. Stir until the shrimp are cooked and everything else has been warmed through.

Add some sliced green onions and stir for another minute. Serve immediately either as a main meal or as a side.
