Reuben Bagel Sandwich
I’m a big fan of Einstein Bros. Bagels, but I don’t have one near me anymore. My favorite is their Texas Brisket Egg Sandwich with smoked beef brisket, cage-free fresh-cracked eggs, cheddar with smoky chipotle aioli on a Jalapeño Bacon Gourmet Bagel. That was the inspiration for my Reuben Bagel Sandwich. I had left over corned beef and decided to make a Reuben Bagel Sandwich.
I am always looking for something different to do with left over corned beef. I did Reuben Egg Rolls last year. So, a breakfast sandwich it is.
- Slice your bagel in half. Toast the bagel slices. Smear the bottom half of the bread with Thousand Island Dressing.
- Layer the bottom half of the bagel with with cooked corned beef, sauerkraut, onions and Swiss cheese.
- Add the cooked egg or egg white on top.
- Smear the top half of the bagel with mustard and/or horseradish sauce (optional) or Thousand Island dressing and place the top half of the bagel on top of the egg.
This couldn’t be any easier!

Reuben Bagel Sandwich
A delicious Reuben Bagel Sandwich! Perfect for breakfast, brunch or lunch and made with left over corned beef.
Ingredients
- 1 Bagel, sliced in half, toasted
- 2 ounces cooked corned beef, sliced or diced
- 2 ounces sauerkraut
- Onions
- Swiss Cheese
- 1 Egg or Egg White, Fried
- Thousand Island Dressing
Directions
- Step 1 Slice your bagel in half. Toast the bagel slices. Smear the bottom half of the bread with Thousand Island Dressing.
- Step 2 Layer the bottom half of the bagel with with cooked corned beef, sauerkraut, onions and Swiss cheese.
- Step 3 Add the cooked egg or egg white on top.
- Step 4 Smear the top half of the bagel with mustard and/or horseradish sauce (optional) or Thousand Island dressing and place the top half of the bagel on top of the egg.
- Step 5 Enjoy!
