Shrimp Scampi
Shrimp Scampi is an elegant Italian-American classic. It is a quick easy meal to make even on a week night. The best part of this finished dish is the lemon garlic butter sauce.
I make this with Linguini, but I have use angel hair pasta as well. In a large pot, cook your pasta in water, kosher salt, and olive oil. Drain and set aside.
In a large pan, add the olive oil and butter. Allow the butter to melt. Add the shrimp and saute for a couple of minutes. Add the minced garlic, white wine, chopped parsley, coarse black pepper, kosher salt, and a pinch of cayenne pepper.
Saute until the shrimp gets some color. Add the cooked pasta to the pan and mix thoroughly. Finish with the lemon juice and plate.
Serve with a big green salad.

- 2 tablespoons olive oil
- 4 tablespoons butter
- 1 pound cooked shrimp, peeled and deveined
- 2 garlic cloves, minced
- 1/2 cup white wine
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon coarse black pepper
- 1/4 teaspoon kosher salt
- pinch of cayenne pepper
- 1 lemon, juice
- Cooked Pasta
Directions

- Step 4 Add the cooked pasta to the pan and mix thoroughly. Finish with the lemon juice and plate.
