Applesauce
This is my Mother’s recipe for Applesauce. She made it every fall around apple picking time. I stopped at the Apple Orchard near me and picked up some apples this weekend.
When I used to help my Mother I had to peel all the apples for her. Now I use this electric apple peeler and it made this recipe so easy. Click on the image for the link.
There are different types of apples and they go from sweet to tart. For making applesauce, McIntosh Apples work well. They break down easily and my Mother always used them. However, they are on the tart side, so you want to mix in some sweet apples like Golden Delicious or Honeycrisp. I used Honeycrisp. I couldn’t get Golden Delicious. My Mother used both, but mainly Golden Delicious. It just depends on what you can get at the time.
Wash and dry the apples. Peel them and cut away any bad parts. Core and cut each apple into thick slices. Place the cut apples into a large pot with the lemon lime soda (we use Sprite), sugar, and lemon juice. Cover. Cook on low for 20 minutes.
Add the ground cinnamon, cloves and nutmeg. My Mother always added in the cinnamon. She would occasionally add the ground cloves and nutmeg since I liked the extra spices. I always put them in.
Continue cooking for another 20 to 25 minutes until everything is well incorporated and the apples can be mashed with a fork or potato masher. We like to keep some of the pieces a little larger.
Serve warm or cold. Store in the refrigerator. You can also process in canning jars if you make a larger batch.
