Lemon Farfalle Pasta with Chicken

Lemon Farfalle (or bow tie) Pasta with Chicken is a quick and easy meal to make.  I used to make this when I was doing catering and it was always a crowd-pleaser.

You only need a few ingredients.

Ingredients

First, season your chicken with kosher salt, freshly ground black pepper and garlic powder and sauté until cooked and browned on both sides.  Diced into small pieces and place into a large bowl.

Sauteed Chicken

 

Boil your mini or regular farfalle pasta in salted water with a little olive oil.  Remove the pasta and drain. Place into the large bowl with the chicken.  Add the butter and mix, allowing the butter to melt.

Microwave your frozen peas according to the package.  Drain and add to the bowl with the pasta and chicken.

Add the juice of two large lemons.  Add the zest of 1 large lemon.  Add the Pecorino Romano cheese and mix thoroughly.

Serve with some additional lemon zest, Pecorino Romano cheese on the side and a little olive oil drizzled over the top.

NOTE:  I forgot to add the drizzle of olive oil over the top before I took the photo.

Ingredients
  • 2 tablespoons olive oil
  • kosher salt
  • freshly ground black pepper
  • garlic powder
  • 3 chicken breast
  • 16 ounces mini or regular farfalle pasta, cooked
  • 2 tablespoons butter
  • 8 ounces frozen baby sweet peas, cooked
  • 2 large lemons, juice and zest
  • 1/2 cup pecorino romano cheese
Directions
  • Step 1 Season your chicken with kosher salt, freshly ground black pepper and garlic powder and sauté until cooked and browned on both sides.  Diced into small pieces and place into a large bowl.
  • Step 2 Boil your mini or regular farfalle pasta in salted water with a little olive oil.  Remove the pasta and drain. Place into the large bowl with the chicken.  Add the butter and mix, allowing the butter to melt.
  • Step 3 Microwave your frozen peas according to the package.  Drain and add to the bowl with the pasta and chicken.
  • Step 4 Add the juice of two large lemons.  Add the zest of 1 large lemon.
  • Step 5 Add the Pecorino Romano cheese and mix thoroughly.
  • Step 6 Serve with some additional Pecorino Romano cheese on the side.
