How to Supreme an Orange

A visual of this technique really helps.  I found this great video on YouTube.  The only difference is that I cut away each segment while the orange is on the cutting board and not in my hand.

How to Supreme an Orange

  • 2 oranges
Directions
  • Step 1 With a sharp knife, trim the ends of each orange. Set one on the flat end on a cutting board.
  • Step 2 Slice off the peel and pith, by following the shape of the orange. Remove any pith that you may have missed.
  • Step 3 Set the fruit on its side on the cutting board. Cut toward the center, along each membrane, freeing each segment. Don’t worry if they are not perfect the first few times you do this.
  • Step 4 Transfer to a bowl.
  • Step 5 The remaining membranes will still have juice left in them. Squeeze the membranes to release the juice into the same bowl.
  • Step 6 Repeat with the second orange.
