Lemon Roasted Greek Potatoes

Lemon Roasted Greek Potatoes, So Good!
Ingredients
- 4 baking potatoes, sliced lengthwise
- 1/2 cup lemon juice
- 1/3 cup olive oil
- 1/3 cup chicken stock
- 2 garlic cloves, minced
- 1 fresh sprig rosemary, stem removed
- 1 teaspoon parsley
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground pepper
- 1/2 teaspoon Greek oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon lemon peel, ground
- 1/8 teaspoon spearmint
Directions
- Step 1 Peel and cut the potatoes lengthwise and place them in a large bowl filled with water until ready to bake.
- Step 2 Drain the potato slices.
- Step 3 Pat them dry with paper towels.
- Step 4 Place them in a roasting pan.
- Step 5 Add the remaining ingredients and toss until coated.
- Step 6 Bake in a 400 degree Fahrenheit oven for 35 to 45 minutes or until the potatoes are golden in color and cooked through. Toss half way through cooking.
Note: When you open the oven to stir the potatoes, stand back. Since there is liquid, it will steam for awhile as the potatoes are cooking. During the last 20 minutes, check to see if you would like to add additional lemon juice.
