Coconut Cranberry Energy Balls
Sweet, creamy and delicious! Not to mention nutritious as well. These no-bake Coconut Cranberry Energy Balls are the perfect energy snack. I first heard about Energy Balls through my Herbal Medicine certification. Rosemary Gladstar makes some great energy “zoom” balls with plenty of healthy herbs. I started experimenting with different versions and this is one my favorites.
These energy balls are a delightful treat for your mind, body and soul. They are a combination of nut butter, coconut, oats, dried fruit and nuts with just enough sweetness to keep you wanting more.
I have kept this version rather simple to get you started. However, you can vary the ingredients to make different energy balls. Change out the peanut butter for tahini, almond or cashew butter. Swap the honey for maple syrup. Add cocoa powder, mini chocolate chips, various chopped nuts and even spices like cinnamon, ginger, nutmeg or cardamom. You can be as creative as you like. I am currently working on one for the fall with pumpkin spices.
Herbs are also a great addition to this recipe. Ashwagandha, astragalus, eleuthero/siberian ginseng are among the various herbs you can add. You can also adapt the herbs used to achieve different properties that you are trying to go for, such as energy, alertness (gota Kola) or even stress reduction. However you decide to make these little balls of goodness, they are a delicious and healthy snack that is sure to satisfy any craving. They make for a perfect mid-day snack and they are also kid friendly. Your children won’t even know that they are healthy for them.

Coconut Cranberry Energy Balls

Ingredients
- 1 cup shredded sweetened coconut
- 1 cup natural peanut butter
- 1 cup old fashioned rolled oats
- ½ cup Craisins
- ¼ cup sunflower seeds, chopped small
- ¼ cup honey
- 1 Tablespoon vanilla protein powder
- 1 Tablespoon agave sweetener
- 2 teaspoons vanilla bean paste (or vanilla extract)
- 1 teaspoon flaxseed oil
- ¼ teaspoon kosher salt
- 3/4 cup unsweetened coconut milk (cream and liquid)
- ½ cup Craisins, cut into small pieces
- shredded sweetened coconut
Directions
- Step 1 In a large bowl, combine the first 11 ingredients.
- Step 2 Pulse everything in a food processor.
- Step 3 Add the coconut milk and pulse until smooth.
- Step 4 Add in the small pieces of Craisins.
- Step 5 Refrigerate the mixture for 1 hour for all the flavors to blend and to firm up.
- Step 6 Roll into balls.
- Step 7 Roll the balls in the shredded coconut.
- Step 8 Keep refrigerated.
