Peanut Butter Blossom Cookies

I have around 80 cookie recipes and one of my son’s favorite cookies is the classic Peanut Butter Blossom Cookies.  It is the perfect blend of peanut butter and chocolate.  Sometimes the classics are the ones the family loves the most.

Preheat the oven to 375 degrees Fahrenheit. Remove the wrappers from the chocolates and set aside.

Beat shortening and peanut butter in a large bowl until well blended. Add sugar and brown sugar. Beat until fluffy. Add egg, milk and vanilla bean paste. Beat well.

In a separate bowl, whisk together flour, baking soda and kosher salt. Gradually beat into peanut butter mixture.

Shape dough into 1 inch balls. Roll in granulated sugar. Place on a cookie sheet lined with parchment paper.  Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into the center of each cookie. Cookie will crack around the edges. Remove from the cookie sheet and onto a wire rack. Cool Completely
