Kielbasa, Sauerkraut and Beer (slow cooker)
I love easy meals to put together and slow cooker meals are my favorite way to do that. One pot. That’s it. Kielbasa, Sauerkraut and Beer tastes great and is a very simple meal to make.
Dice your onion, potatoes, apple and julienne your carrots. When I am really busy, I buy them already prepped. The only thing I had to prep this time was the potatoes and to slice the Kielbasa. Everything else was purchased the way I needed it.
In a slow cooker, add the drained sauerkraut, julienned (matchstix) carrots, caraway seeds, diced potatoes, diced onions and butter. Mix to combine.
Place the 1 inch pieces of kielbasa on top and mix in to combine. Add the diced apples and mix to combine.
Add the beer, and if needed, enough water to cover everything. Mix to combine.
Cook on high for 1 1/2 hours. Stirring occasionally. Reduce the heat to medium or low and cook for an additional 5 hours or until the kielbasa is tender and plump.
NOTE: If you like your sauerkraut a little thicker, add a light cornstarch slurry and continue to cook for an additional 20 minutes.
Serve hot.
