Corn Salad
Sorry, I know that it has been several months since I posted last. I moved and well, the move didn’t go that well. Never buy a house sight unseen. Due to Covid-19, that is the situation I found myself in. No homes to rent and very few homes on the market. When a house came up for sale, it would sell within the first couple of hours with numerous offers and $20k to $30k over asking price. I wasn’t willing to pay that. Finally, a house came on the market. It looked better than the others I had seen online, which truthfully isn’t saying much. The bar wasn’t that high, so I did what everyone else was doing. I put an offer on it without seeing it. I knew there were some issues with the home, but when I moved in, I wasn’t prepared or told about the major issues. Long story. Anyway, the house has been under repair and will be through next year. So, I haven’t even unpacked that much, since each room needs to be remodeled. No point in unpacking, when I will just have to pack everything up again to work on it. I’m basically living in limbo.
I have found a few needed pieces to cook with. The basics like a few pots and pans. I just found some mugs so I can have some tea. I found two plates that I only used for photographing in the past. My plates are still in one of the several hundred boxes that need to be unpacked. So I haven’t been cooking much. Not sure when the next post will be. I’ll try again in a few weeks. I have a few recipes I want to make. Don’t expect too much from the photos right now. I still need to unpack some of my photography equipment. iPhone for now.
This recipe is for a quick corn salad. Very simple to make. I grilled a couple of ears of corn. You could also do this recipe with frozen corn. I removed the corn from the cob after I grilled it. Then sautéed the corn in a little butter with salt and pepper. To make the salad, simply plate some shredded lettuce, add some thinly sliced onions, sliced avocados and top with the sautéed corn. Use the dressing of your choice. I’ve done this several times and have use a couple of different salad dressings. First, I used an Italian dressing and the second time, I used a Honey Dijon Dressing. When I made it with the Honey Dijon dressing, I added a little crumbled bacon, but that is optional. Both were good and I’m sure there are others that would work as well.

Corn Salad
Ingredients
- 2 ears corn on the cob, grilled
- butter
- salt and pepper to taste
- 1 head of lettuce, Shredded
- 1/2 onion, thinly sliced
- 1/2 avocado, sliced
- salad dressing of your choice
Directions
- Step 1 Grill corn on the cob.
- Step 2 Remove the corn from the grill and from the cob.
- Step 3 Sauté the corn in butter, adding salt and pepper.
- Step 4 On a plate (per serving) add some shredded lettuce, thinly sliced onions, sliced avocados and top with the sautéed corn.
- Step 5 Serve with the salad dressing of your choice.
