Shrimp with Angel Hair Pasta
If I remember right, this was originally a WW recipe that I tweaked. It’s perfect for summer as it is light and filled with flavor.
This Shrimp with Angel Hair Pasta is very simple and quick to make. Prepare your vegetables. Make sure to remove the fibrous string from your Chinese snow peas.
In a large skillet, add the olive oil to the pan and swirl to coat the bottom. Add the sliced red onions, red bell pepper, Chinese snow peas and minced garlic. Sauté until the vegetables are cooked, being careful not to burn the garlic. Season with a dash of freshly ground black pepper.
Add the sliced scallions, cooked shrimp, hot sauce, dry vermouth and freshly ground black pepper. Cook until the vermouth starts to reduce, approximately 2-4 minutes.
In a large pot, cook and drain your angel hair pasta by following the directions on the box. To plate, place some angel hair pasta on the plate. Then add some of the shrimp and vegetables, adding some sauce to cover the finished dish.
NOTE: I don’t like things hot. However, I have no problem with the hot sauce in this recipe. I have on occasion put a little too much in and I added a little ketchup to tone it down.

Ingredients

- 1 clove garlic, minced
- 4 scallions, sliced
- 8 ounces jumbo shrimp, cooked and tails removed
- 10-12 dashes hot sauce, to taste
- 1/4 cup dry vermouth
- dash of freshly ground black pepper
- Cooked Angel hair pasta
Directions

- Step 3 Season with a dash of freshly ground black pepper.
- Step 4 Add the sliced scallions, cooked shrimp, hot sauce, dry vermouth and freshly ground black pepper.
- Step 5 Cook until the vermouth starts to reduce, approximately 2-3 minutes.
- Step 6 In a large pot, cook and drain your angel hair pasta by following the directions on the box.
- Step 7 To plate, place some angel hair pasta on the plate. Then toss with the shrimp and vegetables, adding some sauce to cover the finished dish.
