Company Potatoes a.k.a Funeral Potatoes

This finished dish is a nice change from potato salad for the holidays.  Company Potatoes, otherwise known as, Funeral Potatoes are sure to be a crowd pleaser.  This is a popular hot potato casserole in the Midwest.  This dish is commonly called “funeral” potatoes because it is typically served as a side casserole for after-funeral brunches.  Obviously this dish was a hit!  It then became known as Company Potatoes because it was also served at various social gatherings and potlucks.

I recently had these on Mother’s Day at my son’s girlfriend’s Mother’s house.  I have made a few changes.

If you follow me, you know I love dishes that are easy to make.  The onion in the photo was rather large, so I only used half of it.  Unfortunately, the green pepper didn’t make it into the photo.

Company Potatoes Ingredients

Preheat the oven to 400 degrees Fahrenheit.  In a large bowl, mix all the ingredients together.  Place in a large baking dish that has been sprayed with a non-stick cooking spray.

Company Potatoes Oven Ready

Bake at 400 degrees Fahrenheit for 45 minutes.

 

TOPPING:  Pull out of the oven and sprinkle the shredded cheddar cheese and then the crushed corn flakes on top. Place back in the oven for an additional 5-10 minutes until the cheese/corn flake mix is melted and bubbling.

Remove from the oven and let sit for 10 minutes before serving.  Just before serving, sprinkle a little crushed dried parsley flakes over the top.

Company Potatoes a.k.a. Funeral Potatoes is a famous and very tasty hot potato casserole in the Midwest.

Ingredients
  • 1 bag (28 ounces) Frozen Potatoes O'Brien with Onions and Peppers
  • 1 can cream of chicken soup
  • 10 ounces sour cream
  • 1 small onion, diced
  • 1/2 green pepper, seeded and diced
  • 1 stick butter plus 3 tablespoons, cut into cubes
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper


  • Topping:
  • 1 cup mild cheddar cheese, shredded
  • 1 cup corn flakes, crushed
  • 1 teaspoon crushed dried parsley flakes
Directions
  • Step 1 Peheat the oven to 400 degrees Fahrenheit.
  • Step 2 In a large bowl, mix all the ingredients together.
  • Step 3 Place in a large baking dish that has been sprayed with a non-stick cooking spray.
  • Step 4 Bake at 400 degrees Fahrenheit for 45 minutes.
  • Step 5 TOPPING:  Pull out of the oven and sprinkle the shredded cheddar cheese and then the crushed corn flakes on top. Place back in the oven for an additional 5-10 minutes until the cheese/corn flake mix is melted and bubbling.
  • Step 6 Remove from the oven and let sit for 10 minutes before serving.  Just before serving, sprinkle a little crushed dried parsley flakes over the top.
