Chicken Salad with Dried Cranberries and Pecans

Yes, I’m moving again!  So I’ll be making some easy recipes for awhile.  Dishes are packed and paper plates are in.  LOL!

This is an easy and flavorful Chicken Salad with Dried Cranberries (Craisins®) and Pecans.  A perfect chicken salad that is easy to make.  I typically use a seasoned rotisserie chicken, skin removed for this.  It saves a lot of time and the chicken is well seasoned.

I simply dice up the chicken (white and dark meat).  Then add the miracle whip (or mayo) and sour cream.  Next add the diced celery and red onions, followed by the Craisins® and chopped pecans.  Sprinkle with a little freshly ground black pepper and mix thoroughly.  Let chill in the refrigerator for 2 hours before serving.

Chicken Salad

 

You can serve this open face or as a sandwich.  It is also very good served on a croissant with a couple of slices of avocado and alfalfa sprouts (pictured above).
