Apple Spice Muffins

These Apple Spice Muffins are filled with sautéed apples, warm Autumn spices and a wonderful crunchy crumb topping.  If you are like me, you will want to finish the delicious muffin top before you ever get to the muffin.

About ten years ago, I found a muffin recipe, but it needed something.  I tweaked it to give it more flavor and texture.  Everyone loved them!  So now I have plenty of variations on my basic muffin recipe.

As October is coming to an end, I still have a few apples left and I have been craving sautéed apples.  I decided to pull out my muffin recipe and add in sautéed apples, along with a delicious crumb topping.  These muffins are so simple to make and they have the perfect blend of cinnamon and fall spices.

I should mention, that I love muffins, but hate when they are dry.  A great way to get the muffin to be a little extra moist is to add pudding mix to the recipe.  You just need to match up the flavors.  Dark chocolate pudding for a chocolate muffin.  Pistachio pudding for a pistachio muffin.  In this case, vanilla is fine.  Additionally, everyone likes a good muffin dome.  If you fill each cup almost to the top, you will have a beautiful dome on your muffin.   A perfect combination for a winning muffin.

One final note on ingredients.  I use a blend of Saigon Cinnamon and Ceylon Cinnamon.  The big difference is that Saigon cinnamon is a cassia, while Ceylon cinnamon is considered true cinnamon.  Ceylon Cinnamon is more subtle, while Saigon Cinnamon is more intense.  Either will work for this recipe.  

These Apple Spice Muffins can be eaten plain, cut in half and spread with butter or a cream cheese spread.  They are great for breakfast or a tasty snack.  Your family will love them!

: Makes 7 Jumbo or 10 Regular

Delicious apple spice muffins filled with sautéed apples, warm Autumn spices and a wonderful crunchy crumb topping.

Ingredients
  • 2 1/8 cups all-purpose flour
  • 3.4 ounces vanilla instant pudding
  • 2 teaspoons baking powder
  • 1 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/8 teaspoon ground nutmeg
  • 3/4 cup packed brown sugar
  • 6 Tablespoons butter, melted and cooled
  • 2 large eggs
  • 1 cup + 1 Tablespoon whole milk


    Pumpkin Pie Spice Mix
  • 1 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/8 teaspoon ground nutmeg


    Sauteed Apples
  • 3 Tablespoons European style butter
  • 2 granny smith apple, peeled, cored and finely diced
  • 1/2 cup turbinado raw sugar
  • 1 1/2 teaspoon vanilla bean paste (or extract)
  • 1/4 teaspoon pumpkin pie spice mix


    Spice Crumb Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 4 Tablespoons European style butter, softened
  • 3 Tablespoon Turbinado Sugar
  • 3/4 teaspoon pumpkin pie spice mix
  • 1/4 teaspoon ground cinnamon
Directions
  • Step 1 Preheat the oven to 375 degrees Fahrenheit.
  • Step 2 Place muffin liners in a 12-cup muffin tin.
  • Step 3 Sautéed apples – In a hot medium size skillet, add the butter.  Then add the diced apples, turbinado sugar and vanilla bean paste. Sauté the apples until a light golden brown, approximately 5 to 7 minutes. The apples will puff slightly, soft on the outside, but still slightly firm in the center. Set aside and let cool.
  • Step 4 In a large mixing bowl, add the flour, instant vanilla pudding, baking powder, salt, ground cinnamon, ginger, cloves, allspice and nutmeg.  Mix thoroughly and set aside.
  • Step 5 In a medium mixing bowl, add the cooled melted butter, eggs and milk.  Mix well.
  • Step 6 Add the butter mixture to the flour mixture. Mix to combine.
  • Step 7 Add the sautéed apples. Mix to combine.
  • Step 8 Spoon the mix into each muffin liner, almost to the top.
  • Step 9 For the Spice Crumb topping, mix all the ingredients together.  Sprinkle the Spice Crumb Topping on the top of each muffin.
  • Step 10 Sprinkle some additional turbinado sugar on top of each muffin.
  • Step 11 Jumbo:  Bake for 18-22 minutes or until a skewer or a cake tester inserted in the middle of the muffin comes out clean.
  • Step 12 Cool muffins on a wire rack.
