Brussels Sprouts Bacon, Chestnuts and Onions

A great side dish for the holidays!

Ingredients
  • 1 pound Brussel Sprouts
  • 6 ounces center cut thick bacon, medium chop
  • 1 pound chestnuts, cooked and peeled
  • 1/2 cup red onions, medium chop
  • 1 tablespoon butter
  • Kosher salt and freshly ground pepper
Directions
  • Step 1 Cut the ends of the Brussels Sprouts off. Cut each Brussels Sprout in quarters.
  • Step 2 Boil the Brussels Sprout in a medium pot with salted water. Drain and set aside.
  • Step 3 Rough chop the bacon. In a large skillet, cook the bacon until nice and crispy. Remove the bacon to a paper towel lined plate and set aside. Reserve the bacon grease.
  • Step 4 Add 1 tablespoon of the bacon grease back to the pan. Add the chopped red onion and saute on a low heat until translucent. Do not let the onions get dark brown or burn.
  • Step 5 Add butter and 1 additional tablespoon of bacon grease.
  • Step 6 Add the cooked Brussel Sprouts, bacon and chestnuts to the pan. Turn the heat up to a medium-high heat and stirring frequently, saute until everything is a golden brown.
  • Step 7 Season with kosher salt and freshly ground pepper.
  • Step 8 Serve immediately.
