Brussels Sprouts Bacon, Chestnuts and Onions

A great side dish for the holidays!
Ingredients
- 1 pound Brussel Sprouts
- 6 ounces center cut thick bacon, medium chop
- 1 pound chestnuts, cooked and peeled
- 1/2 cup red onions, medium chop
- 1 tablespoon butter
- Kosher salt and freshly ground pepper
Directions
- Step 1 Cut the ends of the Brussels Sprouts off. Cut each Brussels Sprout in quarters.
- Step 2 Boil the Brussels Sprout in a medium pot with salted water. Drain and set aside.
- Step 3 Rough chop the bacon. In a large skillet, cook the bacon until nice and crispy. Remove the bacon to a paper towel lined plate and set aside. Reserve the bacon grease.
- Step 4 Add 1 tablespoon of the bacon grease back to the pan. Add the chopped red onion and saute on a low heat until translucent. Do not let the onions get dark brown or burn.
- Step 5 Add butter and 1 additional tablespoon of bacon grease.
- Step 6 Add the cooked Brussel Sprouts, bacon and chestnuts to the pan. Turn the heat up to a medium-high heat and stirring frequently, saute until everything is a golden brown.
- Step 7 Season with kosher salt and freshly ground pepper.
- Step 8 Serve immediately.
