Avocado Pineapple Salad

Another easy composed salad with plenty of flavor.  Avocado Pineapple Salad is great for a weeknight when you don’t feel like cooking a full dinner.  Simply cut the ingredients and you are good to go.  This salad is light and refreshing.  If you feel you need to add a protein, you can always add a sliced grilled chicken breast.  The bright pineapple lemon herb vinaigrette gives the salad a wonderful light and refreshing flavor.  Perfect for Spring or Summer.

The key to any composed salad is to build it in layers and and dress as you go.  You can add things like lettuce at the bottom with a little dressing.  Next, you can add ingredients like you would in making nachos,  one on top of the other.  Another way is to add the ingredients in sections which is how I do it.  Then mix when you are ready to eat.  In each case, you just need to drizzle some of the dressing on top of the ingredients so that everything gets the flavor.  A pinch of kosher salt and freshly ground black pepper can also be used sparingly.  The flavor will already be there.

For this composed salad, you will need:

Lettuce (Spring Mix works well)
Cucumbers
Grape Tomatoes
Red Onions
Avocado
Pineapple
Pineapple Juice
Lemon Herb Dressing
Grilled Sliced Chicken Breast (optional)

 

For the Salad:

Cut the cucumber in half.  Then cut each half in half again lengthwise.  Scoop out the seeds.  Slice the cucumber on a slight angle.  Set aside.

Cut the grape tomatoes in half lengthwise and set aside.

Dice the red onion and set aside.

Cut the avocado in half lengthwise.  You can remove the seed by pressing down on the back of the avocado in that spot. The seed will come out.  Cut the avocado into cubes.

I purchase pineapple in chunks and in their own juice and used those.  No prep required.  Save the juice for the vinaigrette.

 

For the Vinaigrette:

To make this Vinaigrette, simply pour the pineapple juice from the pineapples into a bowl.  Whisk the pineapple juice with a 1/2 cup of a prepared lemon herb salad dressing.  I use Wish-bone Lemon Herb Vinaigrette Dressing that I purchase from Amazon Fresh.  My local grocer also carries it, but they were out of it.  Mix this with the pineapple juice and voila you have a delicious, refreshing salad dressing.  You can make more depending on how much of the salad you are making.

Composed Salad:

To make the composed salad, layer the Spring Mix Lettuce on the bottom of the bowl.  Add a little of the vinaigrette.  Add the cubed avocado, sliced cucumbers, sliced grape tomatoes, diced red onions and cubed pineapple. Lightly drizzle the Pineapple Lemon Herb over the composed salad.  Serve immediately.
