Stuffed Mushrooms

Your family will love these delicious Stuffed Mushrooms.  If you have any of the cream cheese mixture left over.  It makes a great spread for crackers.  You really could just form the filling into a cheese ball and serve as well.

For this recipe, you will need:

20 large mushrooms, stems removed
8 ounce package cream cheese
1 cup shredded Mexican cheese
4 slices cooked bacon, small crumbles
1/4 cup red onion, minced
1/2 jalapeño pepper, ribs/seed removed, minced
1/2 teaspoon garlic powder
1/8 teaspoon freshly ground black pepper

To make this finished dish, remove the stems of the mushrooms and set aside for later.

Mix the remaining prepped ingredients in a large bowl. Mince the stems of the mushrooms and add to the ingredients. Mix thoroughly.

Stuffed Mushrooms Filling

Spoon the cream cheese mixture into the center of each mushroom.  Place on a baking sheet lined with parchment paper.  Bake in a 350 degree Fahrenheit oven for 35 – 40 minutes or until the cheese has melted.

NOTE:  I had some left over aluminum cupcake pans, so I used those.  You can simply place the filled mushrooms on a baking sheet instead.
