Apple Spice Cake

I was looking for my Mother’s Spice Cake recipe and unfortunately it has been lost.  So I took my Aunt Hattie’s Applesauce Cake recipe from 1949 and made some modification to it, basically adding what I remember from my Mother Spice Cake recipe.  The outcome, an Apple Spice Cake that is moist and delicious!  Top it with a cream cheese frosting and you have a perfect Autumn dessert.

For the cake, in a large bowl, add the sifted flour, baking soda, kosher salt and spices.  Set aside.  In a large bowl or stand mixer, mix the granulated sugar, brown sugar, vegetable oil, applesauce, apple cider, beaten eggs and vanilla bean paste (or vanilla extract).  Add the sift flour mixture, in thirds and mix until combined.  Do not over mix.  Add the he sautéed apples and mix to incorporate.  Pour batter into two greased and floured 9″ x 5″ loaf pans.  Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.  Let the cakes cool completely.  Frost with Apple Cider Cream Cheese Frosting (see recipe below).

Ugh!  I couldn’t get to any baking pans, so I bought these smaller Paper Bread Loaf Pans off of Amazon.  They fell apart in the oven and instead of rising, the cakes spread and are falling over on the side.

At least it still tastes wonderful. It’s moist like a cake (not a quick bread) with plenty of apples and perfect fall spice flavor.  It’s just not what I was expecting.  No more baking until I can get to my baking pans.

Apple Cider Cream Cheese
The Apple Cider Cream Cheese frosting couldn’t be easier.  Simply mix the softened cream cheese, confectioner’s sugar and apple cider.  I switched to low-fat cream cheese years ago and no one has noticed the difference, but regular cream cheese is fine as well.  I had put it in the refrigerator because I was working on something else.  I really should have mixed it better before frosting the cake.  Just wasn’t my day today.

Apple Spice Cake

Ingredients
  • 3 cups all purpose flour, sifted
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon clove
  • ½ teaspoon allspice
  • 1/8 teaspoon nutmeg
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 1 cup vegetable oil
  • 1 cup unsweetened applesauce
  • 1/4 cup apple cider
  • 2 eggs + 1 egg white, beaten
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1 1/2 cups Sautéed Apples
  • Apple Cider Cream Cheese Frosting
Directions
  • Step 1 Preheat the oven to 350 degrees Fahrenheit.
  • Step 2 Grease and flour two 9″ x 5″ loaf pans.
  • Step 3 Sift together the flour, baking soda, salt and spices. Set aside.
  • Step 4 In a large bowl, mix the granulated sugar, brown sugar, the vegetable oil, applesauce, apple cider, beaten eggs and vanilla bean paste (or vanilla extract).
  • Step 5 Add the sifted flour mixture in thirds and mix until combined.  Do not over mix.
  • Step 6 Add the sautéed apples (recipe below) and mix to combine.
  • Step 7 Pour batter into greased and floured 9″ x 5″ loaf pans.
  • Step 8 Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
  • Step 9 Let the cakes cool completely.
  • Step 10 Frost with the Apple Cider Cream Cheese Frosting (recipe below.)

Sautéed Apples

Delicious Sautéed Apples that can be used in cakes, muffins, pastries, over ice cream and more.

Ingredients
  • 2 large Granny Smith Apples, small dice
  • 1/4 cup Turbinado (Raw) Sugar
  • 1 tablespoon European butter
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1/8 teaspoon ground cinnamon
Directions
  • Step 1 In a large frying pan, add the small diced apples, sugar, butter, vanilla bean paste and cinnamon.
  • Step 2 Sauté until golden brown and the sauce becomes a light syrup. Do not over cook, especially if you will be using in a cake, muffin or pastry recipe.  Let cool before using.

A quick Apple Cider Cream Cheese Frosting

Ingredients
  • 16 ounces cream cheese, softened
  • 3/4 cups confectioner's sugar
  • 1/4 cup apple cider
Directions
  • Step 1 In a large bowl, add the softened cream cheese, confectioner’s sugar and apple cider.
  • Step 2 Mix thoroughly.

    NOTE:  Don’t have time to make frosting buy the 14 oz Duncan Hines Whipped Cream Cheese frosting and mix in the apple cider.  You may have to adjust the amount of the apple cider.
