Pastina Soup
Over the last couple of weeks, the temperatures have been up and down. I was still looking for something to warm me up during the days when it was close to freezing. Pastina Soup is so comforting and easy to make. It is also a perfect soup for when you are feeling sick. My Mother called it, Italian Penicillin Soup. As a child, I loved the little stars in the soup, so this is a child-friendly finished dish.
For this soup, you will need:
Butter
Onion
Celery Ribs
Carrot
Garlic Clove
Low-Sodium Chicken Broth
Chicken Bouillon
Dried, Crushed Parsley
Pastina star-shaped Pasta
Kosher Salt
Freshly Ground Black Pepper
Lemon Juice
Grated Pecorino Romano (garnish)
Serve with Oyster Crackers or Mini Saltines
To Make This Soup:
In a large stock pot, sauté the sliced onions, celery, carrots and minced garlic clove in butter until the onions are translucent and the celery and carrots are fork tender.
Add the low-sodium chicken broth, chicken bouillon, and pastina star-shaped pasta.
Lightly season with kosher salt and freshly ground black pepper.
Bring the soup to a boil. Reduce and let simmer for up to 1 hour.
Stir in the dried, crushed parsley and lemon juice. Remove from the heat. Serve with grated Pecorino Romano cheese for garnish.

This child-friendly Pastina Soup is a great comfort food and perfect on a cold day.
Ingredients

- 1 medium onion, sliced thin
- 2 celery ribs, sliced thin
- 1 large carrot, peeled, halved and sliced thin
- 1 garlic clove, minced
- 48 ounces low-sodium chicken broth
- 1 tablespoon chicken bouillon
- 1 cup pastina star-shaped pasta
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon dried parsley, crushed
- 1/2 lemon, juice only
- Grated Pecorino Romano for garnish
Directions

- Step 3 Lightly season with kosher salt and freshly ground black pepper.

- Step 5 Stir in the dried, crushed parsley and lemon juice. Remove from the heat. Serve with grated Pecorino Romano cheese for garnish.



Love pastini soup. So very comforting. Mine usually has more pastini pasta than it looks like yours has.
