Cauliflower Cheese Soup
This creamy and luscious cauliflower soup is something you really need to try. It will become a new favorite! It did at my house. My son loves it.

Ingredients
- 1 stick butter (8 tablespoons)
- 1 medium onion, diced
- 4 stalks celery, diced
- 1 large head cauliflower, cut into florets
- 2 cups low-sodium chicken broth
- 1 cup low-sodium beef broth
- 8 ounces of cream cheese
- 2 cups cheddar cheese, shredded or cubed
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- Pinch cayenne pepper
- 1 cup heavy whipping cream
Directions
- Step 1 In a large soup or stock pot, sauté the diced onion and celery in butter until translucent.
- Step 2 Add the cauliflower florets.
- Step 3 Add the low-sodium chicken broth and the beef broth.
- Step 4 Add the cream cheese and shredded or cubed cheddar cheese.
- Step 5 Add kosher salt, freshly ground black pepper and cayenne pepper.
- Step 6 Bring to a boil. Reduce heat and simmer for 25-30 minutes or until the cauliflower is soft.
- Step 7 Add the heavy whipping cream. Stir and simmer for an additional 5 minutes.
- Step 8 Adjust the seasonings as needed.
- Step 9 Remove from the heat and blend until smooth. Serve immediately.
